Kanchipuram Idli
Ingredients needed
- Raw rice – 1 cup
- Urad dal (whole) -1/2 cup
- Salt as needed
For the seasoning
- Sesame Oil – 1 1/2 tbsp
- Ghee -3 tsp
- Mustard seeds 1 tsp
- Urad dal – 1 1/2 tsp
- Chana dal -1 tsp
- Black Pepper- 2 tsp slightly crushed
- Cumin seeds/ jeera – 1 tsp
- Ginger – 1 inch piece grated
- Dry Ginger powder – 1/4 tsp (optional)
- Hing/asafoetida – 1/4 tsp
- Soak rice , dal and methi seeds together for 4-5 hours.Grind them to a slightly coarse paste adding salt & required water.The batter should be thick.
- Allow it to ferment for overnight.Next day add jeera ,black pepper , hing & curry leaves.Mix well.
- In a kadai using a spoon of oil, add the mustard seeds,chana dal and urad dal and wait till the dal turns golden brown.Add it to the batter.

Grease a round wide vessel.Pour the batter or use the regular idli plates.

Steam it for 30 minutes or so. check it with the back of a spoon. If
it comes out clean,idli is done..
