Kanchipuram Idli






 Ingredients needed

  1.    Raw rice – 1 cup
  2.    Urad dal (whole) -1/2 cup
  3.    Salt as needed

   For the seasoning

  1.    Sesame  Oil – 1 1/2 tbsp
  2.    Ghee -3 tsp
  3.    Mustard seeds 1 tsp
  4.    Urad dal – 1 1/2 tsp
  5.   Chana dal -1 tsp
  6.    Black Pepper- 2 tsp slightly crushed
  7.    Cumin seeds/ jeera – 1 tsp
  8.    Ginger – 1 inch piece grated
  9.    Dry Ginger powder – 1/4 tsp (optional)
  10.    Hing/asafoetida – 1/4 tsp
 Preparation

  • Soak rice , dal and methi seeds together for 4-5 hours.Grind them to a slightly coarse paste adding salt & required water.The batter should be thick.
  • Allow it to ferment for  overnight.Next day  add jeera ,black pepper , hing & curry leaves.Mix well.
  • In a kadai using a spoon of oil, add the mustard seeds,chana dal and urad dal and wait till the dal turns golden brown.Add it to the batter.
  • Grease a round wide vessel.Pour the batter or use the regular idli plates.
  • Steam it for 30 minutes or so. check it with the back of a spoon. If it comes out clean,idli is done..
