Badam Kheer
Ingredients ( to serve 4 to 6)
- 25 almonds (badam)
- 1 litre (33.4 fl Oz) milk ( preferably NOT toned milk)
- 1/2 cup water
- 1/2 cup sugar
- 1/4 tsp. cardamom powder (optional - sometimes this may suppress the badam flavour)
- 5-10 strands saffron, crushed, soaked in 1 tsp. warm milk
- A few dry almonds sliced into thin slivers.( you can also add sliced pistachios)
- Soak almonds for 30 mins in warm water
- Peel the skin of almonds
- Grind the almonds into paste with 1/2 cup water
- Bring the milk to boil in heavy pan
- Add almond paste
- Keep stirring occasionally till it thickens.
- Add sugar and saffron ( and cardamon if desired)
- Cook for 2 minutes in a very low flame / heat
Serve chilled after garnishing with the almond slivers.
